At LomoAlto we have started an initiative so that our star pieces have a sponsor. Important personalities from the world of gastronomy sponsor our pieces of ox and old cow that mature for half a year in our own restaurant chamber.
During the months of maturation of the piece, the sponsor witnesses its evolution and celebrates its subsequent ‘descuelgue’ (taking down), as well as collaborating in the preparation of the tasting menu of their sponsored piece.
With this action we want to disseminate and give visibility to the process of MATURED MEAT.
